Strawberry Rhubarb Bars
Crust: - Sift together: 2 C Flour, 2 tsp Baking Powder, 1 tsp Salt
- Cut in 1/2 C soft butter until crumbly
- Add 2 eggs beaten with 2 tsp milk
- Beat until resembles coarse crumbs
- Spread in greased 9x13" pan, pat down very lightly
Filling:
- Cover crust with 4 C finely chopped rhubarb
- Sprinkle two- 3oz pkgs Strawberry flavored Jell-O on top of rhubarb
Topping:
- Combine: 2 C Sugar, 1 C Flour, 1/2 C soft butter
- Sprinkle over top
Bake: 350 degrees for 40min or until edges get bubbly, allow to cool
(I think it is delicious while still slightly warm :-)
